Fogón serves its tasting through the year in an indoor room, so there's no season when the menu isn't running. What changes is how far ahead you need to book: the counter holds about 35 guests per seating, and demand tracks the Buenos Aires tourist calendar and the weekend.
Spring and autumn are the city's best
Buenos Aires is loveliest in the southern spring (September to November) and autumn (March to May), when the jacarandas or the plane trees are at their best and the weather is mild for walking Palermo. These are also busy months for visitors, so the dinner seating in particular books out early — hold your date as soon as your trip is set.
Summer heat and the January lull
December to February is hot and humid, and many porteños leave the city in January, so the neighbourhood can feel quieter — but international visitors are plentiful, and a two-hour meal at a fire is more comfortable at the 20:00 seating than at midday. Winter (June to August) is cool and calm, the easiest time to find a seat at short notice, and the fireside room comes into its own.
Weekends fill first
Whatever the season, Thursday to Saturday dinners are the seatings that sell out, followed by weekend lunches. Midweek lunches are the most reliably available at short notice. If your dates are fixed on a weekend, book weeks ahead rather than days; if they're flexible, a midweek seating is the easy win.
